Cook up a festive feast
Winter is Coming…
So I am actually writing this from the other side of the world (Australia) where winter is not coming, but summer is! Even though things are heating up here on the East Coast my mind is turning towards Christmas and I must admit I am looking forward to spending the day hot and in a pool…but I will REALLY be missing cooking up a warm storm in the kitchen.
Goose fat potatoes, brussel sprouts with pancetta…ooh I can’t stop, I need the lot! For some reason, tucking in to a hot dinner just really satisfies the soul doesn’t it? Even if it is not cold outside, spending a Sunday gathered at home centring yourself around the oven for hours, prepping and cooking whilst being with the kids just really makes my heart feel full.
In our Maggie & Rose London clubs we will be bringing these family meals back on our menus for these cooler months and to celebrate the return of the roasts, I’ve put together my family recipes that I love making, for you to share at home. I’ve really focused on bigging up the side dishes here as I love my veg and really focus on making these the stars of mine and my kid’s plates. Happy cooking! Ooh p.s…….have you ever tried Yorkshire Puddings with Chicken Liver Pate spread on them?! This combo is to die for!!
My top roast meat Ideas…
Create a mix of dried lavender, thyme, honey, salt and pepper and rub over a whole chicken or thighs
Grated ginger & garlic mixed with paprika makes for a good beef rub
Finely slice tarragon leaves and mix with seasoned butter –stuff underneath the skin of a whole chicken
You can’t go past a rack of lamb for a special roast –blitz a handful each of parsley, mint and coriander with the juice and zest of a lemon, salt and pepper, olive oil, fresh chilli and 2-3 garlic cloves.
Pour over the rack and once cooked you will have some seriously moreish chops once cooked!
